WINERY INFORMATION Neil Paulett completed his degree in Oenology from Roseworthy in 1971 Ten years later Neil and his wife Allison set out to search for a location to plant their vines They ended up purchasing a property in Clare Valley region in 1983 Presently the company owns a total of 147hectares of family vineyards spread throughout the Polish Hill and Watervale regions These vineyards are nurtured and managed by their son Matthew nbsp TASTING NOTES The premium grapes used to create Paulett Antonina Riesling were picked during cold hours destemmed and then drained to obtain the finest juice It presents a beautiful pale straw colour with green tinges The aromatic bouquet is perfumed with lemon and lime scents with flinty and slatey tones following close behind This sparkling Riesling is beautiful and lively on the palate brimming with intense flavours of citrus and lime These great characters are balanced by firm acid line culminating in a long and lingering finale Drink this alluring white wine with King George whiting prawns and oysters to unveil its real fruit potential nbsp
