From the highly particular terroirs of Hampshire, near Winchester, where chalk is the dominant element in the soil, this sparkling wine was developed using a thoroughly classic and traditional method. The blend consists of a large majority of Pinot Noir and a sufficient proportion of Chardonnay to bing lightness and finesse. At first glance, it is a lovely and delicate pale straw yellow in color. To the nose, the key word that comes directly to mind is “freshness”, but also “finesse” thanks to the yellow citrus aromas that emerge. The end note is straight and free of harshness, with a well-controlled dosage that leaves no impression of sweetness.
