TASTING NOTES The resulting powerful but elegant Pinot Noir is a medium red-hue with a youthful purple tinge Its amazing depth of black cherry fruit on the bouquet and palate leaves no doubt as to its varietal expression The palate is well-balanced and particularly long The nose gives depth of drk cherry with a subtle oak-induced spice which provides additional texture coupled with earthy influences The commanding savoury structure lends a textural mouth-feel Because of its bright acidity complexity and rich fruit character this sleek smooth and easy to drink wine pairs with a wide variety of food However it goes better with poached salmon braised duck roasted mushrooms oven-baked salmon fillets garlic roasted tenderloin or leaner meats such as veal turkey rabbit or chicken
